Dhungar (Hindi धुँगार) Smokiness

The n in Dhungar is nasal, tacked on top of the consonant for Dh(Hindi: ध, Bengali: ধ)

The Dhungar method, possibly invented in Rajasthan, quickly imparts smokiness to Kebabs made without a tandoor oven.

And now cocktails.

A small amount of charcoal is put on fire, then added to a small container with ghee and splices like cloves. This container is placed next to the cocktail glass, and the whole thing is covered with a lid.
